just a number?

Tomorrow, I'm turning 38. Just by working on getting healthier, I feel better than I did when I turned 28. I'm already a lot healthier than I was at the beginning of the year. I've been eating less and healthier, I've been burning 2-3x the calories I've been consuming. I haven't been losing much weight wise, but doc says I'm gaining muscle. My clothes fit better, my skinny jeans are now my fat jeans (need to shop for a new pair). I was discouraged when I saw the scale, but then I noticed the other differences. I am excited about those differences.

Red Pepper Egg-In-A-Hole

Servings: 4 • Serving Size: 1 egg  Old Points: 2 pts  Points+: 2 pts
Calories: 79.8 • Fat: 5.0 g  Protein: 6.4 g  Carb: 1.4 g  Fiber: 0.1 g 
  • olive oil spray
  • 1 bell pepper cut into 4 1/2" thick rings
  • 4 large eggs
  • salt and fresh pepper
In a large nonstick skillet, heat on medium heat. When hot, spray olive oil spray, add pepper and let it cook a minute, then add egg into the center of the pepper. Season with salt and pepper and cook until the egg whites are mostly set but the yolks are still runny, 2-3 minutes. Gently flip and cook 1 more minute for over easy, longer if you like them over well.
