Zesty Herb Grilled Chicken

Zesty Herb Grilled Chicken


Makes 6 servings.
Prep Time: 10 minutes
Refrigerate Time: 30 minutes
Cook Time: 40 minutes
1 package McCormick® Grill Mates® Zesty Herb Marinade
1/3 cup water
3 tablespoons vegetable oil
3 tablespoons white wine vinegar
2 pounds bone-in chicken parts
1. Mix Marinade Mix, water, oil and vinegar in small bowl. Place chicken in large resealable plastic bag or glass dish. Add marinade; turn to coat well.

2. Refrigerate 30 minutes or longer for extra flavor. Remove chicken from marinade. Discard any remaining marinade.

3. Grill chicken over medium heat with lid closed 30 to 40 minutes or until cooked through, turning frequently.
Variation: Prepare as directed, substituting 2 pounds boneless skinless chicken breast halves for the chicken parts. Grill 6 to 7 minutes per side or until cooked through. My Christmas Goal

My first goal was to lose at least 100 pounds by Christmas. I don't know what I was thinking about when I decided on that, because there's no way I can do that. We need to be more realistic when deciding our goals. I am making progress and moving forward, for that I am proud of myself. I decided to set smaller goals from now on, maybe 10 pounds a month. If I do more than that, then great. If not, I'll be happy losing 10. Winter is more difficult for me with my knee problems. Cold makes the pain worse. Last Christmas, my daughter's father gave us a Wii. As a gamer who hates exercising, I found this to be the perfect gift. This way, I have to get up and exercise if I want to play. Wii and similar games are perfect when the weather isn't allowing you to go outside. I also do some stretches in a hot shower (that's when I have the least pain). No matter the pain, I'll keep moving forward. Just remember one thing:

Chloe's been asking for blueberry pancakes lately. So tonight, I'm making them with applesauce instead of water and adding fresh blueberries.
Not only are blueberries really good for you, but they are really sweet. So you don't need syrup. Tonight's dinner will only have 442 calories.

Brisk is AWESOME

Have you tried any of Brisk's Fusion drinks? I have been extremely addicted to Pepsi and Mountain Dew for years. I've been having a difficult time trying to give it up so I can lose 200 pounds and reach my goal., but Brisk has helped a lot. A 1 liter of Pepsi has about 600 calories, Brisk Fusion Iced Tea & Lemonade (my fave) only has 160 calories per 1 liter bottle. Since I'm only allowed a total of 1500 cal per day, I'm now going towards Brisk.

I also need to drink at least 3 liters of water. At the dollar store, I got a baby bottle brush. This way, I can clean and reuse the Brisk bottle a few times. By putting 3 bottles of water in my fridge every day, I can keep track and make sure I'm drinking enough water.

Today for lunch, I'm having baked Tilapia with frozen Cal. Med. and white rice (cooked in chick. broth). My desert is Yoplait yogurt Strawberry Orange Sunrise light. All of this is delicious, fulfilling, and all are 363 calories. I'm allowed up to 500 calories per meal. So if I need to later, I'm able to have a small snack.

I just cooked some frozen cauliflower, broccoli, and carrots on the stove in a little chicken broth. It tastes pretty good, and I didn't have to add butter or salt.

Much of the disastrous 10 pounds per decade (that is suspected of being the foundation of our obesity crisis) is acquired between Thanksgiving and New Years. Regardless of your familial background, there are more gatherings, celebrations and opportunities to eat at this time of year. Navigating them so you can enjoy without the backside burden takes a tiny bit of practice. 
Here's your game plan:
1. Never go to a part hungry. A boiled egg and an apple will fill you with fiber and protein without a lot of calories. 
2. Be the one who always brings the veggie platter with low fat yogurt dip or hummus.
3. Seat yourself next to said platter and nibble to your heart's content. The goal is to fill you up while you still have willpower (/are sober). 
4. Promise yourself you will not eat the chips, popcorn, peanuts, chocolates and any other manner of crap before the main course. Afterwards, if you are still hungry, portion yourself a handful onto a plate. Studies show that we eat more from a larger bag, box or bowl than when we pull out what we think we want. Even when we know we are tricking ourselves, it is better to be aware when we are overdoing it, chances are better this way that you make up for any indiscretions. 
5. Whether you are having a buffet, cocktails only or full sit down dinner, fill half of your plate with green vegetables, ¼ with starchy vegetables like carrots and squash and the other ¼ with lean protein.
6. Avoid anything deep fried. (Note: This is the first time I have used the word "avoid")
7. Never have more than 2 alcoholic beverages. Not only can calories from alcohol not be burned as fuel but they also reduce your inhibitions which likely means you will eat more! 
After the celebration season, you will need different skills but, if you follow these steps, you shouldn't have too much trouble.

My Thanksgiving dinner

I'm only supposed to have 500 calories per meal, but I did go over by 104 for my Thanksgiving dinner. Just because I'm trying to lose weight doesn't mean I need to totally avoid dinner all together. I just need to be smart about it. This doesn't seem like much, but I am satisfied.
