Ingredients
Sweet Potato Nachos
- 1 small sweet potato (approx. 250 – 300g)
- 1/2 tsp cumin
- 1/4 tsp cayenne pepper
- 1/4 tsp paprika
- 2 tsp melted coconut oil
Toppings
- 2-3 tbsp cooked black beans
- 1/2 a roasted red bell pepper diced
- 1/2 an avocado diced
- 1/4 cup (30g) cashews (soaked for at least 4 hours) + 2-3 tbsp water, 1-2 tsp nutritional yeast(optional)
- Coriander to garnish
- Preheat oven to 200C (400F).
- Slice sweet potato thinly ideally using a mandolin. Coat with coconut oil and spices and place on a non stick baking tray. Bake in the oven for 15 minutes. Remove, turn each one over and bake for a further 15 minutes.
- Meanwhile blitz cashews with water and nutritional yeast if using. Season with a little salt and pepper depending on your taste!
- When the sweet potato is cooked lay them “nachos” on a plate, top with red pepper, black beans, spring onion and avocado. Drizzle with cashew cheese sauce and garnish with coriander to serve.
