Veggie Pasta Cheesy Bake


Ingredients

4 cups pasta 
12 oz  shredded mozzarella
1 onion, diced
1/2 red pepper finely chopped *optional
1 cup frozen chopped green beans
1 cup frozen peas
½ Tbsp olive oil
Garlic 1 - 2 cloves minced
1 cup milk with 1 tablespoon flour stirred in
Fresh basil, chopped
Salt & pepper to taste

Directions

1 Boil the pasta until al dente.  It will continue to cook a bit in the oven.  Drain and set aside.
2 In a frying pan add the olive oil, the onion,the red pepper and the garlic and season with salt, pepper, and Italian herbs and cook until translucent.
Stir the above ingredients into your cooked pasta.
Add in about 1/2 of the cheese, the milk /flour mixture and mix.
Stir in the frozen beans and peas
3 Put the pasta mixture into small individual baking casserole dishes (or you can put it all into a large one) and put the remaining cheese on.
4 Bake at 350 degreesF (180C) for about 20 minutes, and then broil for another few minutes until the top is bubbly and brown.
