Cinco de Mayo

Chloe and I have always loved theme cooking. So when Cinco de Mayo comes around, we got to make Mexican food. Now I have to remember to cook healthier and portion my food correctly. So today for lunch, I made Chloe a turkey taco (with a good amount of veggies on it), and I made a turkey taco salad without a shell. Instead of adding a tremendous amount of cheese and sour cream like I used to always do, I just add cottage cheese. To me, it serves the same purpose and is much healthier.
