In my quest to be healthier, I went in yesterday for a Colonoscopy. For those of you who don't know what that is, they stick a camera up your butt and look around. I was having some issues. Luckily, it wasn't that bad. You're not allowed to eat anything the whole day before and the day of. For a fat chick, that was horrible enough. Then to add to it, I had to do my first colon cleansing. That's when you clean out your entire digestive track... really fast. I told them it was cruel and unusual punishment. Turns out I lost 4 pounds that day. I did watch the Doctors on Fox, and they said that some people use that as a weight loss method and why it's not a good idea to. Dr Ordon said that not only do you flush out the bad stuff, but you also flush out the good bacteria that aid in digestion. I just want to share this, because as I do enjoy losing weight quickly I don't want problems in the long run.

Todd Wilbur’s Reduced-Calorie, Reduced-Fat Hot Artichoke Spinach Dip

Added to Recipes on Fri 04/20/2012
Ingredients
Makes 1 1/2 cups (3 total servings)

1 cup chopped frozen artichoke hearts, thawed and diced
1/2 cup frozen chopped spinach, thawed
2 tbsp water
4 oz reduced-fat cream cheese
4 oz 2% Greek yogurt
1/2 cup grated Parmesan cheese
2 tbsp low-fat milk
1/2 tsp salt
1/4 tsp crushed red pepper flakes
1/4 tsp garlic powder
1 pinch ground black pepper
1/2 tomato, diced

For Dipping
Crackers
Toasted bread
Pita chips
Raw sliced vegetables

Directions
Combine diced artichoke hearts and chopped spinach in a microwave-safe bowl with 2 tablespoons of water, cover bowl with plastic and poke a few holes in it to vent. Microwave vegetables on high for 6 minutes.

Combine remaining ingredients in a small saucepan. Add the steamed artichokes and spinach and place pan over medium/low heat, stirring often for 10 minutes or until simmering. Just before serving, you may wish to broil the dip in an oven-safe dish for 1 to 2 minutes (under high broil) or just until slightly brown on top. Arrange the diced tomato in a pile in the center of the dip and serve with crackers, toasted bread, pita chips or raw vegetables for dipping.

update

One thing that I found that's really important to losing weight and maintaining your health is sleep. You need to be well rest and have energy to move. Unfortunetly, I have a small airway. When I lay down, all air is cut off. I've tried using a Cpap machine, but what's the use in pushing air in if there's no where for it to go. I've been so tired, I started falling asleep during the day. So my doctor sent me to an ENT (ear, nose, and throat) specialist. After shoving a camera up my nose (ouch), he decided that I need to go in to have my tonsils/adenoids removed, deviated septum repaired, and palette/back of tongue trimmed. Hopefully, that will help me breath enough to get a good nights sleep. Sometimes, we have to do what's unpleasant to make us better.

Today

Had a pretty good morning. Walked a half hour to my workout. Did the stepping machine, kept it above 100 steps per minute for five minutes ( 1 of those mins was 125 steps). Did some exercises, and finished up by doing 80 LBs on the leg press. Just had a good brunch. Going to relax a bit, then  either go for a walk later or some more exercises.

HUNGER HITS HOME

We're watching "Hunger Hits Home" on Food Network. Even though Chloe and I have been in a situation where we've needed help, we were very blessed. I hope to be in a point in our lives where we are not only comfortable but can start to donate to food pantries and give back. If you can help someone, you should. Not all of us on food stamps are lazy bums looking for a hand out. I've had a hard time looking for a job here even with my Bachelor's. I'm not just sitting on my butt collecting welfare. We're living on child support. During this time, I'm working on my health and my Master's. Chloe & I are planning on moving back home so hopefully I can find a good job (possibly a career) in the Chicago area. We will never forget where we've been, and we will help whenever we can.

I'm watching Chopped on Food Network. Tonight, they have cafeteria ladies competing. Each of them prepare healthy food for the students of their schools. Why won't Davenport get somebody like that?

feeling so good

In the past week, at least six people asked if I was losing weight. I didn't think it was that noticeable. Know how good that feels... amazing. Wait til I lose even more.

This morning, I walked Chloe to school on my way to PT (about 30mins). Then my physical therapist had me workout for about another half hour. I leg pressed 80LBs while squeezing a ball between my legs. She also showed me exercises I can do at home that will help my bad knee. I was only sore for a few minutes. Going to check out some healthy Easter recipes, then I'll do some of my exercise homework. I hope everyone else is also having a good Good Friday.
