SWEET POTATO FRIES

I got this recipe from the Biggest Loser Resort website.


SWEET POTATO FRIES
Prep Time: 5 minutes
Cook Time: 30 minutes
Total Time: 35 minutes
Ingredients: 
  • 2 large sweet potatoes 
  • 1 Tbsp Extra Virgin Olive Oil 
  • Sea Salt & Pepper (to taste) 
Directions: 
  • Preheat the oven to 450 degrees. 
  • Cut sweet potatoes into 1/2 inch strips or wedges and toss in the olive oil and season with salt & pepper. 
  • Arrange in a single layer on a nonstick baking sheet (uncovered). 
  • Place in oven for 30 minutes, turning once. 
Want to be adventurous? Add your favorite herbs and spices to jazz up your fries. Chef Rodolfo loves adding Rosemary!

Both sweet potatoes and yams are starchy, orange root vegetables with a natural sweetness. Sweet potatoes are lower in calories, have lower glycemic levels, and are higher in beta-carotene than the yam, and are thus believed to be a better bet nutritionally. But don't write off yams, they offer high levels of vitamin C and folate!
